The savoury and spicy flavours in the triangular briouat are reminiscent of the steaming cuisine at Margaret’s Court of Savoy. And the round pastilla with salty and sweet notes would happily have sat alongside the pasties on the table at the home of humanist Jerome of Busleyden in the 16th century. Hunger not yet satisfied? Then be sure to take a look at the sweeter than sweet pastries. You will recognize a wide range of flavours, from almond, cinnamon, dried fruits to rosewater.
